Tonight I prepared a delicious organic meal from the garden. A few days ago, I picked the first two Viva Italia tomatoes, along with some fresh Cameo basil and Millionaire eggplant. Sorry the photos of the dish is not better, but I was so hungry and just snapped these with my iPhone. I sauteed freshly chopped garlic in olive oil, then tossed in 1 chopped Roma tomato, freshly torn basil and some eggplant.
Cooked that for a few minutes and tossed it into fresh pasta. Grated cheese, fresh cracked pepper and salt to taste. Delicious and best of all, most of the ingredients came from my vegetable garden.

Thanks Diane. It was delicious and I think I’ll be making it again this weekend. It took about 10 minutes to make. Healthy, organic and packed with antioxidants.
